Coava Coffee Roasters
Inner EastsideOne of the roasters that defined modern Portland coffee. Coava's flagship is austere and a little severe — polished concrete, tall windows, the low hum of the roaster in back — and the coffee is exacting to match: clean, bright, single-origin-forward, pulled by people who very obviously care.
The order
A pour-over of whatever single origin is on, drunk black — that's the whole point here. Espresso people: order a cortado and let it sit a second.
