Spielman Bagels (Division)

Division

The original Spielman shop and a perennial best-bagel-in-Portland pick — slow-fermented sourdough bagels, kettle-boiled and baked into 20-plus flavors with a crisp shell and a tart, fluffy crumb. It's a sit-down neighborhood bakery-cafe with a garden and patio, order at the counter, breakfast-and-brunch focused. Spielman started as a coffee roaster and still runs a full espresso bar, so the coffee is a genuine reason to stay, not an afterthought.

The order

A kettle-boiled sourdough bagel — the jalapeno cheddar or the Seedy (flax, pumpkin, watermelon seeds) — with a schmear, or the lox sandwich if you're making a meal of it. The coffee is a real espresso bar (beans from SE's Water Avenue), so a cortado or cold brew holds up next to the bagel.
